Basics of safe life Directory / Basics of safe life In accordance with the rules of veterinary sanitary examination, the carcass of an animal can remain ungutted for no longer than 3 hours. Then the skin of the legs is cut from the hooves, the incisions are connected in the middle of the chest and at the anus (Fig. 2.4). The skin is skinned from both sides at once or sequentially, as long as it is possible and convenient, then the carcass is turned over on its side and from the opposite side the skin is skinned beyond the line of the spine. After that, the carcass is turned to the other side and the rest of the skin is trimmed until it is completely separated.
The carcass is cut on the skin. First, all the legs are cut off, then the sternum along the line of cartilaginous connections with the ribs. The peritoneum is cut along the midline of the abdomen. As the stomach protrudes, the rest of the carcass is tilted on its side, and the stomach falls out of the incision. Next, the esophagus is cut along the neck along with the trachea and is dragged through the hole between the ribs into the chest. Pulling the internal organs by the trachea and esophagus and cutting the ligaments and diaphragm with a knife, all the insides are removed from the carcass and taken aside. Separate the lungs, heart, liver, kidneys and spleen. The rest of the carcass is divided in half, between the 12th and 13th ribs. The head can be separated both at the beginning and at the end of the operation. This method of cutting is most common among commercial hunters of the European North. In frosty weather, each part of the carcass (if it is not possible to take them away immediately) is laid separately on pure snow, otherwise the frost will “cement” the pieces and it will be possible to separate them from each other only with an ax. In this case, all contaminated and bloodied areas must be cleared with snow. The skin is folded in an envelope, the skin inside. The skin laid in this way freezes gradually, its commercial qualities do not decrease even in severe frosts. And yet, what should you pay attention to when cutting carcasses. Hunters, carving the carcasses of hunted animals, noticed that on the internal organs - the liver, stomach, intestines, especially on the mesentery - some translucent blisters the size of a walnut and more are localized. They seem to be suspended from the organs on a thin ligament. This is the most common larval form of the thin-necked Finn. Ungulate animals are intermediate hosts of this helminth.
