Monarda's homeland is North America and Mexico, from where the plant was brought to Spain after the discovery of a new continent by Columbus. Bee balm, American lemon balm, Indian feather, lemon balm, Oswego tea are all different names for the same plant, named after the Spanish physician Nicola Monardes. Interestingly, Monardes himself did not leave his native Seville, which at that time was the center of American-Spanish trade, but founded a botanical garden there, in which he grew and studied exotic plants brought from the American continent. And in 1569 he published notes "Glad News from the New World" and "Medical History of Western India", where he described new plants and their medicinal properties. Many more years passed before the monarda came to the rest of Europe and gained popularity there - in the 17th century it began to be grown as a garden plant with very showy flowers. In 1753, Carl Linnaeus included the plant in his classification of species - "Plant Species", and the genus got its name in honor of Dr. Monardes. In the 18th century, English settlers founded Fort Oswego at the mouth of the river flowing into Lake Ontario, and from the Indian tribes that inhabited the territory, they learned about the medicinal properties of the monarda, which grew in abundance in those places. From the leaves and flowers, the locals made medicinal and strengthening teas. Oswego Tea, as the monarda was called, peaked in popularity in 1773. After the Boston Tea Party, tea brewed from the leaves of the monarda and other native plants became a symbol of the liberation of the American colonies. Of the more than 20 species of monarda, only two are cultivated with the most pleasant citrus aroma. One of the names - "bergamot mint", Monarda received for the similarity of the smell of flowers with the noble citrus - bergamot. Harvested and dried, monarda flowers retain all of their flavor and can replace missing bergamot when added to black tea. It is better to collect flowers and leaves from young shoots during the flowering period. Monarda flowers can be added to summer crucons, to the greens of summer salads, along with calendula flowers and other plants. A slightly different story - leaves. In them, the closeness of the monarda to oregano and thyme is more felt. Older leaves are rougher, more "heavy" components of the smell and a burning taste are more pronounced in them. Young ones, in combination with other spices, are suitable for sauces, cooking fish and meat dishes, boiling, soaking fruits and making canned food. Lots of options!
