Nasturtium has proven itself especially well as an antiscorbutic agent. The amount of vitamin C in it is 2 times more than in blackcurrant, reaches 500 mg% or more. There are even more antimicrobial substances in it - phytoncides and provitamin A (carotene).

Dishes from nasturtium have dietary and medicinal properties in a number of diseases, especially in atherosclerosis and metabolic disorders associated with age-related changes. It is no coincidence that the recipe for the healing cardinal salad has been preserved among the people.

Currently, a large number of different recipes for dishes from this plant have been developed. You can count dozens of salads, mashed potatoes, minced meats, marinades, soups and hodgepodges.

Nasturtium can be prepared for future use: dry and salt the leaves, pickle flower buds and green fruits.

Leaves can be collected from spring to late autumn. Fruits for pickling are harvested immediately after the flowers fall, until they become hard.

Growing nasturtium is easy.

On well-fertilized soil, in a bed the size of a dinner table, you can grow enough nasturtium, which is enough for the whole winter. But it is best to use it fresh.

Annual plant.

The stem is fleshy, strongly branched, smooth, juicy. Leaves on long petioles, corymbose, entire, rounded-unequal-sided, with blunt veins.

The flowers are large, the anterior 3 petals at the base of the plate are fringed, orange with blood-red stripes, the spur is somewhat curved. The fruit is dry, splitting into three lobes.

Blooms in June.

Homeland - South America from Peru to New Grenada.

Fresh leaves and stems contain 0,2-0,46% and OD-0,16% of ascorbic acid, respectively, carotene. The essential oil from the seeds consists mainly of benzyl azote nocyanate.

Nasturtium has long been used in cooking. Fresh leaves, hard flower buds, unripe green seeds have a sharp taste; used as a seasoning for salads, meat, vegetable and egg dishes. Flower buds and green fruits are pickled with dill and vinegar to replace capers.

An aqueous infusion of the herb was used in folk medicine in the treatment of scurvy, anemia, skin rashes and urolithiasis. A decoction of herbs with honey was used for thrush and other diseases of the oral cavity in the form of a rinse.

In the folk medicine of America, the juice from the leaves of nasturtium was used externally for skin itching and scabies, as well as a means to strengthen hair, and an infusion of flowers - inside for heart disease, hypertension.

In German folk medicine, nasturtium juice was used for chronic bronchial catarrh, and an alcohol tincture of a mixture of nasturtium leaves and stinging nettle was used for rubbing as a means of enhancing hair growth.

Nasturtium is very decorative. Tall creeping forms are used to decorate balconies, hedges, undersized - for planting in groups, for borders, rocky areas.

The small nasturtium (Trapaeolum minus) comes from South America. Cultivated as an ornamental plant. It is used similarly to capuchin large.

There are cultivated forms that have double dark orange flowers.
