Fragrant Zubrovka

A perennial herbaceous plant of the grass family with a long creeping rhizome and erect, ascending stems at the base, reaching 50-70 cm in height.

Basal leaves are linear. pointed, stem - linear-lanceolate, shorter. Spikelets are golden or brownish-yellow, round-ovate, collected during flowering in a spreading panicle. The fruit is an oblong, dark brown grain.

In the wild, bison is found in the northern temperate zone of Europe, Asia, America, Central Asia, the Caucasus, the Far East, and Western Siberia. It grows in meadows, along the edges of forests, high in the mountains.

Fragrant bison can grow on almost any land. Growth begins in late March - early April, budding - in late April - early May, mass flowering - in May-June.

Fruit ripening occurs at the end of June.

Cultivation. Fragrant bison can be cultivated after almost any predecessors. The soil for its sowing or planting is carefully cleaned from the roots of wheatgrass, "since in the process of subsequent plant care it will be difficult to do this due to the very similar nature of the distribution of the root system.

If organic fertilizers were not applied under the predecessor, then mineral fertilizers are applied to the prepared soil: 15-20 g of ammonium nitrate, 20-25 g of superphosphate. 10-15 g of potassium salt per 1 m2. Sowing of seeds is carried out immediately after their collection or before winter.

They are planted in holes to a depth of 1,5-2 cm. The distance between rows is 30-40 cm. Seedlings appear in May-June.

Propagation is done by dividing the rhizomes or by root cuttings. In early spring, shortly before planting, cuttings are cut so that each has 3-4 growth points or without them, if there are rooted buds.

They are laid in a prepared hole at a distance of 20-30 cm from each other, watered and covered with earth.

After the emergence of shoots and the germination of rhizomes and root processes, the site is thoroughly loosened and the plants are weeded.

Subsequent loosening is carried out carefully so as not to damage the rapidly emerging horizontal root shoots and, which are usually located close to the surface of the earth.

Zubrovka grass is harvested during the flowering of plants, when it has the highest content of coumarin. In addition to the flowering period, the grass can be cut again after it has grown back. However, in this case, it contains somewhat less coumarin. In mowed grass, yellowed basal leaves and flower panicles are removed. The leaves are dried under a canopy or in a well-ventilated area.

Dried bison is stored in the form of bundled leaves or in bags or boxes. Unlike other spicy-aromatic plants, the fragrant bison herb can be stored for up to 2 years without changing its quality.

The bluegrass family is Poaceae.

Perennial plant with long creeping rhizomes.

Stems 30-80 cm high, smooth. The leaves are flat, basal long-pointed, stem - lanceolate-linear-shortened.

Leaf sheaths glabrous, smooth or rough, sometimes with a ring of small hairs at the point of origin of the leaf blade.

Inflorescence -panicle with horizontally spaced branches; spikelets ovoid, yellow-brown; outer glumes slightly longer than inner ones; inner glumes with cilia along the edge. Blooms in May - June. The grains ripen in August.

Grows in meadows, grassy slopes, forest clearings among shrubs.

Holarctic view. Distributed in Ukraine, Belarus, the European part of Russia, the Caucasus, Western Siberia, the Far East, Central Asia. In the mountains at an altitude of up to 3000 m above sea level.

The plant contains hydroxycinnamic anhydride in the form of a glycoside, which gives it an aromatic smell. In the stems and roots, a significant amount of the alkaloid dinaxin, coumarin, was found.

The smell of the plant is strongly coumarin, the taste is slightly astringent.

The aerial part is used in the alcoholic beverage industry for the production of Zubrovka aromatic tincture and in the confectionery industry for the production of food essences. Tested and approved as a spice in fish processing.

Zubrovka is included in the recipes of domestic spices as a flavor enhancer that enhances the overall bouquet of the spice composition. It is used in connection with sharply individual perception in a limited amount.

In folk medicine, fragrant bison was used as a means of increasing appetite, enhancing the activity of the digestive tract. Due to the presence of the alkaloid dinaxin in significant quantities, it is toxic to farm animals. Due to the presence of coumarin, it is badly eaten by animals, but a small admixture to hay improves appetite and increases milk yield in cows.

Fragrant bison has a well-developed root system and creates a dense turf; it is recommended for strengthening railway embankments and ravine slopes.
