Here are some recipes cheese.

Brynza

Ingredients:

milk - 2 l.;
kefir - 200 g;
salt - 2 tablespoons;
chicken eggs - 6 pcs.;
sour cream - 400 g.

Add salt to milk and boil. Add beaten eggs, sour cream, kefir. Stirring with a whisk, boil for 5 minutes until curdled.

Drain in a colander through several layers of damp gauze. Hang gauze so that the serum is well glassed.

Put under the press for 4-5 hours at room temperature.

Place in refrigerator for 2-3 hours.

Cream cheese

Ingredients:

cottage cheese - 500 g;
milk - 0,5 stack;
butter - 2 tbsp. l.;
soda - 0,5 tsp;
salt to taste;
dill to taste.

Mix milk, cottage cheese, soda. Grind with a blender.

Heat over low heat, stirring constantly. When the cottage cheese begins to melt, add butter, dill, salt.

Cheese home

Ingredients:

cottage cheese - 1 kg;
milk - 1 l.;
chicken egg - 1 pc. (or 2 yolks);
butter - 100-130 g,
soda - 2-3 tsp;
salt - 1 tsp
greens to taste.

Boil milk. Add cottage cheese and cook, stirring, over low heat, 3-5 minutes until the cheese curd separates.

Drain in a colander through several layers of damp gauze. Hang gauze so that the serum is well glassed.

Beat together the softened butter with the yolks (egg), salt and baking soda. Mix with cottage cheese, add greens if desired, mix well.

Put in a water bath. Cook for 8-10 minutes until the mass begins to melt and becomes viscous.

Transfer the hot curd to a greased baking sheet or colander.

Place under a light press and refrigerate for 2-3 hours.

Carefully remove the finished cheese from the mold, cut into portions.

Paneer

Ingredients:

milk - 10 stack;
lemon juice - 5 tbsp. l. / citric acid - 2 tsp. / yogurt - 300 ml. / serum 2,5 stack.

Put milk on medium heat. As soon as it starts to boil, add curdling ingredient.

Drain in a colander through several layers of damp gauze.

Rinse under running cold water. Hang gauze so that the serum is well glassed.

Press if desired.

egg cheese

Ingredients:

milk - 1 liter;
chicken eggs - 10 pcs.;
sugar - 1 tbsp. l.;
salt - 0,5 tsp;
Vanillin to taste.

Mix milk and eggs with a mixer. Add sugar, salt, vanilla.

Put on a slow fire and, stirring, cook until curdled.

Drain in a colander through several layers of damp gauze. Hang gauze so that the serum is well glassed.

Sulguni cheese"

Ingredients:

milk - 1l.;
fat cottage cheese, not granular - 1 kg .;
chicken eggs - 3 pcs.;
butter - 100 g;
salt - 1 dess. l.;
soda - 1 tsp

Put cottage cheese into boiling milk. After boiling, cook over medium heat, stirring gently, for 40 minutes.

Drain in a colander through one layer of damp gauze.

In warm cottage cheese, add 3 eggs, softened butter and 1 tablespoon of salt. Mix well.

Put on medium fire. Cook, stirring for 10 minutes.

Lubricate a deep bowl with butter, shift the cheese mass, smooth with a spoon. Cool, put the bowl in the refrigerator for 2-3 hours.

Turn the bowl over and place the cheese on a platter.

Cheese "Adyghe"

It is prepared in the same way as Suluguni cheese (see above), but cook for no more than 30 minutes.

Add 3 eggs, softened butter, dessert spoon of salt, 1 teaspoon of baking soda.
