Eating insects is deeply alien to Europeans. However, five years ago in Holland there were many companies that grow insects for food. They do not offer the consumer crickets or worms, but extract proteins from them, which are used as food additives. The benefit is that insects consume much less food per unit of useful weight and pollute the environment less than the same cows.

What about insect oil? Wageningen University researcher Dr. Daylan Tsomba-Sosa is doing just that. Insect oil is very useful, because it is rich in omega-XNUMX fatty acids, which are not produced in mammals. It is assumed that the oil obtained from it will go into ice cream, pastries or cream.

“Fat extracted from some insects, such as a grasshopper or a shiny lion fly, has a pleasant fruity aroma. But a cockroach smells disgusting, you can’t use its fat for food, but it will be useful for making lubricants. So far, we are working out the technology for obtaining oils and we study their physical and chemical properties. This is the basis for future commercial applications," says the researcher.
