Kerguelen cabbage

Names: fr. chou de kerguelen, choucavalier.

Antarctic plant, grows on Kerguelen Island.

Differs in endurance.

The inflorescence is in the form of a brush, up to 70 cm high. The leaves are used as a salad, and the root is used like horseradish.

The leaves form a rosette. Taproot, up to 30 cm long.

Kerguelen cabbage

Kerguelen, or cavalry, cabbage has antiscorbutic properties, which was noted by Captain Cook, who used it during his Antarctic travels.

The plant is edible, rich in vitamin C, so it was consumed by sailors of passing ships as a remedy for scurvy. The very name of the species "antiscorbutica" in Latin means "against scurvy".

Kerguelen cabbage (Pringlea antiscorbutica) is a perennial plant that grows in Antarctic and near-Antarctic islands.

Tips for growing, harvesting and storing Kerguelen cabbage:

Cultivation:

  • Kerguelen cabbage grows on soil, which consists of gravel, sand and soil. It grows best in shady areas and requires good drainage.
  • At room conditions, Kerguelen cabbage can be grown in pots. It prefers cool climates and humidity, so it should be watered regularly, but not flooded.
  • Reproduction of Kerguelen cabbage occurs through seeds or cuttings.

Workpiece:

  • Kerguelen cabbage was known to sailors as a valuable source of vitamin C, so it was often used to prevent scurbut. Today, it can be used as an additional source of vitamin C.
  • Kerguelen cabbage leaves can be eaten both fresh and boiled. Leaves should be harvested during active growth, when they are young and juicy. They should be thoroughly washed and cut before use.

Storage:

  • Kerguelen cabbage leaves are most healthy fresh, but they can be frozen or dried for long-term storage.
  • To freeze the leaves, they should be cut and spread on a baking sheet in a single layer, then placed in the freezer. Once frozen, the leaves can be packaged in freezer bags and stored for up to 6 months.
  • To dry the leaves, spread them out in a single layer on paper towels and dry them in a cool and dry place. After drying, the leaves can be stored in a tightly closed container for up to 1 year.
