The pungent spicy taste of pepper is due to the content of capsaicin in it, and it is 20 times more than in sweet pepper. Some of the varieties are very pungent. Therefore, it is necessary to use this pepper very carefully and in small doses, although the inhabitants of the tropics who are accustomed to it eat a lot of it. Peppers contain an essential oil that gives them a special flavor. In addition, they contain fatty oil, as well as dyes, vitamin C, vitamins P, B1, B2 and carotene. Ripe fruits of red hot pepper are used in cooking, in medicine in the manufacture of pepper patches. In the form of a powder, it is part of pepper mixtures - a substitute for black allspice. In southern countries and regions, it is used fresh for making mashed potatoes, as well as salads. Fresh fruits as a whole are added to canned vegetables. In ground form, it is used to make hot sauces. It is preserved: crushed and poured with a solution of salt and vinegar. Red hot pepper is a typical spice in South American cuisine (soups, sauces, meat, fish, egg and vegetable dishes). Peppers are added to the soup during cooking, and not in the finished dish. It is good to add it to mashed potatoes in combination with garlic, coriander, basil, savory, bay leaf powder. Red hot peppers can also be grown at home - in flower pots. Its seeds are soaked for 2-3 hours in water. Then sown in a small container or flower pot. Seeds are planted to a depth of 1-1,5 cm, well watered and covered with foil. When shoots appear, the film is slightly opened to allow air to enter. When 2-3 true leaves appear, pepper seedlings are planted in flower pots with a capacity of 1-2 liters, placed on a well-lit place on the windowsill and watered abundantly. A necessary condition for the normal growth and fruiting of red pepper is its regular watering with periodic feeding with a flower mixture.
