Hot red pepper

Semi-shrub of the nightshade family up to 60 cm high with branched stems and elliptical leaves.

The flowers are large, white or grayish with purple spots, solitary, located in the convolutions of the branches and in the axils of the leaves.

The fruit is a berry with a low-juicy pericarp. The shape of the fruit, depending on the variety, is different - from spherical to trunk-shaped. The color of the fruits are from yellow and red to black-olive.

Usually peppers are dried in the sun, while it shrivels and darkens. The dried pods are freed from the cups and ground.

The plant is native to tropical America. According to finds in Peruvian burials, it was cultivated here long before the discovery of America. The Spaniards and the Portuguese, who discovered these spices for Europeans during their voyages, called it "Indian".

Currently, red hot peppers are grown in most countries located in the tropics, but most of all in India and Thailand. Although it is a perennial shrub, in Europe, in greenhouses, this pepper is grown as an annual plant. Hot red pepper is cultivated as an annual plant in Ukraine, the Caucasus, and Central Asia.

Currently, many new varieties of this pepper with different taste qualities have been bred.

The pungent spicy taste of pepper is due to the content of capsaicin in it, and it is 20 times more than in sweet pepper.

Some of the varieties are very pungent. Therefore, it is necessary to use this pepper very carefully and in small doses, although the inhabitants of the tropics who are accustomed to it eat a lot of it.

Peppers contain an essential oil that gives them a special flavor. In addition, they contain fatty oil, as well as dyes, vitamin C, vitamins P, B1, B2 and carotene.

Ripe fruits of red hot pepper are used in cooking, in medicine in the manufacture of pepper patches.

In the form of a powder, it is part of pepper mixtures - a substitute for black allspice. In southern countries and regions, it is used fresh for making mashed potatoes, as well as salads.

Fresh fruits as a whole are added to canned vegetables. In ground form, it is used to make hot sauces. It is preserved: crushed and poured with a solution of salt and vinegar.

Red hot pepper is a typical spice in South American cuisine (soups, sauces, meat, fish, egg and vegetable dishes). Peppers are added to the soup during cooking, and not in the finished dish. It is good to add it to mashed potatoes in combination with garlic, coriander, basil, savory, bay leaf powder.

Red hot peppers can also be grown at home - in flower pots. Its seeds are soaked for 2-3 hours in water. Then sown in a small container or flower pot. Seeds are planted to a depth of 1-1,5 cm, well watered and covered with foil. When shoots appear, the film is slightly opened to allow air to enter. When 2-3 true leaves appear, pepper seedlings are planted in flower pots with a capacity of 1-2 liters, placed on a well-lit place on the windowsill and watered abundantly.

A necessary condition for the normal growth and fruiting of red pepper is its regular watering with periodic feeding with a flower mixture. In such conditions, the pepper vegetates well until February-March of the next year. The fruits are harvested as they ripen.

With red pepper, a South American plant - from the point of view of botany, a relative of potatoes and tomatoes - Europeans met in the 1532th century. It happened off the banks of the Orinoco River, on the territory of modern Venezuela, in XNUMX.

When the wind blew towards the Spaniards, something strange, completely inexplicable happened to their detachment: uncontrollable tears poured from the eyes of the soldiers, sneezing and coughing mixed up the fighting ranks, resistance became completely impossible - and then the Indians rushed into battle. Well, they asked the Spaniards pepper!

That's right: they burned ground red pepper on hot coals! At the same time, a caustic, pungent substance was released, irritating the mucous membranes of the mouth, throat and nose. The conquistadors, of course, lost that battle.
