Area: Kupyr forest is common in Europe, Asia and North America.

Chemical composition: Roots, stems, leaves and seeds of the forest kupyr contain carotene, vitamins C, E, PP, as well as trace elements - iron, manganese, potassium, calcium. The leaves and fruits contain oil, as well as vitamin A and salicylic acid.

Economic value: Kupyr forest has medicinal properties, is used in folk medicine as an analgesic, antipyretic, anti-inflammatory and antiseptic. The plant is also used in cooking to flavor dishes.

Kupyr forest

Grows on forest edges, near fences, along roads, in gardens, parks, floodplain meadows.

Perennial herbaceous plant up to 1,5 m high. The stem is fistulate, ribbed, pubescent. The leaves are double- and thrice-pinnate, grow in the spring from the wintering root, large, pubescent, with a pleasant smell when rubbed.

Blooms in June - July. The flowers are small, inconspicuous, collected in complex umbrella inflorescences. Fruits are oblong-oblong, 6-7 mm long.

The grass contains vitamins C, B1, starch, fructose, sucrose, proteins.

Good honey plant.

For household purposes, a yellow dye of various shades for wool is obtained from the grass.

In nutrition, tender fleshy stems and young leaves are used. Salads, cabbage soup, side dishes are prepared from them. They are pickled, fermented for the winter. The peeled ones are eaten raw.

Coupir salad. Rinse young leaves and stems thoroughly with cold water, chop, add chopped sorrel leaves, green onions, salt, season with mayonnaise, or sour cream, or vegetable oil. 150-200 g of kupir, 25 g of sorrel, 25 g of green onion, 25 g of mayonnaise (or sour cream, or vegetable oil), salt to taste.

Salad of kupyr and goutweed. Coupir greens, chop the goutweed leaves, add chopped green onions, grind with salt. Drain the juice.

Dress the salad with mayonnaise, or sour cream, or sunflower oil. 150 g of kupyr, 50 g of goutweed, 25 g of green onion, 25 g of mayonnaise (or sour cream, or sunflower oil), salt to taste.

Shchi with kupyr. In salted water or meat broth, boil chopped potatoes, carrots, add sautéed onions, chopped kupyr, sorrel, bring to a boil. Top with hard-boiled egg and sour cream before serving. 500 ml of broth, 100 g of potatoes, 30 g of carrots, 25 g of onions, 100 g of kupyr, 50 g of sorrel, 25 g of sour cream, 2 eggs, salt.

Coupir puree. Blanch leaves and stems for 2-3 minutes, pass through a meat grinder, season with sour cream, butter or sunflower oil. Serve as an independent dish or as a side dish to meat and fish dishes. 300-400 g of kupyr, 25 g of sour cream (or butter, or sunflower).

Pickled greens of kupyr. Blanch young leaves and stems for 1-2 minutes, arrange in sterilized jars, pour marinade, cover with lids and pasteurize: half-liter jars - 15, liter - 20 minutes, cork. Store in a cool place. Use as a side dish or appetizer. For the marinade: 1 liter of boiling water, 2-3 bay leaves, 1 dessert spoon of vinegar, allspice, salt to taste.

Pickled greens of kupyr. Rinse the leaves and stems of the kupyr with cold water, drain in a colander. When the water drains, chop, salt, put in an enamel bowl. Put a weight on top. Add to cabbage soup, use as an independent dish and as a side dish. 1 kg of kupyr, 100 g of salt.

In folk medicine, fresh, thoroughly washed leaves with cold water are used. They are applied to burns, boils, carbuncles.

Contraindications have not been established.

Celery family - Apiaceae.

Biennial plant 50-150 cm high. Stem erect, hollow, branched. The leaves are triangular in outline, three-pinnate; lobes oblong-ovate or lanceolate, pinnately incised; petioles and sheaths are short-haired.

The flowers are white, umbrellas at the ends of the stem and branches are collected in a corymbose inflorescence. Fruits are ovate-elongated, laterally compressed, smooth, shiny. Blooms in June - July. The fruits ripen in August - September.

Grows in forests, among shrubs.

European look. It grows throughout Europe; in the temperate climate of Asia, affecting the tropical regions of India and Nepal; in Africa it is found from central to northern regions.

Kupyr forest

The leaves contain 0,12-0,14% (sometimes up to 0,44) ascorbic acid, starch, carotene (up to 0,015%), sugar (up to 4), protein (up to 3); in fruits and stems - essential oil (0,05%). Essential oil of yellow color with a brown tint and a sharp unpleasant odor.

More than 18% fatty oil, starch (more than 20%), glucose (up to 6%), disaccharides (more than 3%), fiber (10%) were found in the fruits.

From spring young leaves of kupyr, which have a strong pleasant smell, and lower fleshy stems (mixed with leaves of other odorless salad plants), vitamin salads, botvinia, okroshka are prepared. Boiled roots can also be consumed in salads. Stems and leaves can be pickled and fermented.

In the south, mainly in the Kherson region, there is an oak bush (bugila dibrovna - Anthriscus nemorosa (Bleb.) Spreng.), The aerial part and roots of which have a strong carrot smell. They are put in soups, cereals, vegetable and meat dishes, in the East - in pilaf.

Forest kupyr and oak kupyr - valuable spring honey plants, give nectar. Openwork leaves and inflorescences are very decorative.

The stalks and leaves of the forest bush stain the wool in various tones of yellow.

Kupyr forest - a perennial plant, most often found on the edges of oak forests, along roads, under fences, in abandoned clearings, wet meadows. The scientific name comes from the Greek "anthos" - a flower and "rihos" - a fence, a fence.

The young leaves of kupyr contain 3,9% carbohydrates, 2,5% proteins, various acids and vitamins were found. Fresh roots have about 1% sugars, 14,7% starch, 5,7% sucrose. In the Caucasus (Abkhazia, Adzharia), wort is prepared from the crushed roots of kupyr and alcohol is expelled in the usual way.

The stems and leaves are pickled and salted for future use. In some regions of the Northern and Western Caucasus, young, peeled stems of kupyr are a delicacy for children, although they are distinguished by strong odors.

Ethnoscience:
