Orlyak ordinary

Common bracken is a very common fern in the forests of middle latitudes. From a thick creeping rhizome that branches, coarse pinnately dissected regular leaves grow. While they are just starting to grow, they are called vayami. The length of the leaves is from 60 to 120 cm.

Bracken rhizomes contain 46% starch, so they are often used to make a paste. In Germany, rhizomes have long been used in brewing. In some countries of Northern Europe, rods of young leaves rich in protein and starch, the plate of which has not yet developed, are attracted to the menu. The leaf sprouts are hook-shaped and densely pubescent with brown hairs. Sprouts have been eaten since time immemorial. Their remains are found during excavations of piled buildings in France and Switzerland, in Scythian burials.

The collected rods are cleaned of leaf particles and boiled a little. Then washed two or three times in water to extract tannins and bitterness. After such preparation, the rods can be used to make soups and borscht, side dishes, seasonings for various dishes, fried in breadcrumbs or flour. In Altai, even now, seedlings are harvested and dried, preparing for the winter for soups and seasonings.

Starch is obtained from the rhizomes of the bracken. To do this, raw rhizomes are ground on a grater or meat grinder, thoroughly washed with the resulting mass. After some settling, the starch is washed several times in cold water until it turns white.

Orlyak ordinary

The rhizomes also have a lot of potassium, so they lather well. In some provinces of France (Brittany, Champagne, Lower Rhone), bracken is still used as a substitute for soap.

From rhizomes containing about 46% starch, during lean years in Polissya and Belarus, in the northern regions of the European part of Russia and the Caucasus, coarse flour was obtained, which was added to grain when baking low-grade bread at home.

Dug and peeled rhizomes are cut into small pieces and soaked in cold water, changing it several times. Then pieces of rhizomes are dried and ground on graters, in mortars.

Alcohol content of warm beer 07.05.2024

Beer, as one of the most common alcoholic drinks, has its own unique taste, which can change depending on the temperature of consumption. A new study by an international team of scientists has found that beer temperature has a significant impact on the perception of alcoholic taste. The study, led by materials scientist Lei Jiang, found that at different temperatures, ethanol and water molecules form different types of clusters, which affects the perception of alcoholic taste. At low temperatures, more pyramid-like clusters form, which reduces the pungency of the "ethanol" taste and makes the drink taste less alcoholic. On the contrary, as the temperature increases, the clusters become more chain-like, resulting in a more pronounced alcoholic taste. This explains why the taste of some alcoholic drinks, such as baijiu, can change depending on temperature. The data obtained opens up new prospects for beverage manufacturers, ... >>
