It grows on sandy soils, in pine and deciduous forests, among shrubs, in glades, along roads.

Perennial herbaceous plant up to 40 cm high. Stem single, erect, round, densely leafy. Roots thickened in the form of tubers. The leaves are fleshy, juicy, collected in spherical rosettes, covered with a bluish bloom.

Blooms in July - September. The flowers are small, pink or purple, create corymbose-paniculate inflorescences at the top of the shoots. Folk sign: if the flowers remain open at night, it will rain, if they close, the weather will be fine. The fruits are prefabricated multi-leaflets.

The plant contains glycosides, organic acids, a lot of vitamin C, carotene, sugar, starch, calcium salts, tannins.

Leaves are used in nutrition, which have a pleasant sour taste. Salads, vinaigrettes, cabbage soup, side dishes for meat, fish dishes, refreshing drinks are prepared from them. They are fermented, marinated.

Seasoning from hare cabbage. Dried leaves are crushed into powder. Use as a vitamin seasoning for meat, fish dishes, soups, borsch (for 1 serving - 10-15g of powder).

Bunny cabbage salad. Rinse young leaves thoroughly with cold water, blanch for 2 minutes. Then cut with a knife, add chopped green onions, hard-boiled egg, salt and season with sour cream, or mayonnaise, or vegetable oil. 150-200 g of rabbit cabbage, 25 g of green onion, 1 egg, 25 g of sour cream (or mayonnaise, or vegetable oil), salt to taste.

Salad with hare cabbage. Cut tomatoes, cucumbers, green onions, hare cabbage leaves, salt, mix, season with sour cream, mayonnaise or sunflower oil. Potato soup with hare cabbage and tomatoes. Boil potatoes and parsley roots in salted meat broth or water. Shredded carrots and onions fry in butter with fresh tomato juice. Put shredded rabbit cabbage, fried vegetables, sliced ​​red tomatoes into the broth and bring to a boil. Season with whipped yolk with sour cream. Hare cabbage filling. Blanch young leaves for 1-2 minutes, finely chop, add chopped browned carrots, onions, hard-boiled eggs, salt, mix. Use for fillings in meat cutlets, meatballs, meatballs, pies, pies. 500 g rabbit cabbage, 200 g carrots, 150 g onion, 2 eggs, 50 g vegetable oil, salt to taste.

Carrot pancakes with hare cabbage. Peeled carrots grate on a fine grater, add chopped rabbit cabbage, eggs, salt, flour, mix thoroughly. Fry pancakes in sunflower oil. Serve with sour cream or butter. 500 g carrots, 150 g rabbit cabbage, 200 g flour, 3 eggs, 200 g sour cream, 150-200 g sunflower oil, salt to taste.

Pickled rabbit cabbage. Grind the hare cabbage leaves, lay them tightly, sprinkling with salt, in an enameled bowl, put under oppression. Store in a cool, dry place. Use for side dishes, soups, borscht. 1 kg of rabbit cabbage leaves, 50 g of salt.

Infusion of hare cabbage leaves. Infuse 20 g of leaves in 200 ml of boiling water for 4 hours. Strain and drink 50 ml 3-4 times a day before meals for kidney disease, gastritis, colitis with diarrhea, scurvy, bleeding, general weakness, impotence, female infertility.

A decoction of the leaves of hare cabbage. Boil 20 g of leaves in 200 ml of water for 10 minutes, then strain. Take 25-30 ml 3 times a day for kidney disease.

Pounded fresh leaves can be applied to wounds, ulcers, burns.

Steamed leaves wrapped in gauze - to painful places, joints, muscles, bones.

Hare cabbage, or purple stonecrop, is a perennial herbaceous plant from the Crassulaceae family with an erect stem up to 80 cm high.

The leaves are very characteristic oval, thick, juicy, fleshy, with a slight waxy coating. On the edge of the leaves are small blunt teeth. On the roots mealy thickening in the form of elongated tubers.

The flowers are small, often in corymbose inflorescences, red, rarely whitish, with five petals.

It grows in meadows, among shrubs, along the edges of pine forests, on rocky slopes, dry sandy places, and also as a weed in crops, along the edges of fields.

The leaves are rich in vitamin C and flavone compounds.

This plant is rare, it must be protected in every possible way: do not uproot and do not pick off flowers. It is easily propagated by cuttings of the stem and roots.

Young shoots and leaves of hare cabbage are used for making salads, drinks, and sauerkraut.

In some regions, rabbit cabbage is grown in gardens and orchards, as well as indoors in ordinary flower pots. This allows you to have fresh greens not only in summer, but also in winter, which is very important for the northern regions.

In addition to purple stonecrop, edible stonecrop is large, white stonecrop, hybrid stonecrop and their close relatives - juvenile roofing and juvenile holly.

Medical studies have shown that stonecrop has healing properties.
