In the tropical regions of South America, the low-alcohol drink chicha is popular. It is mostly prepared by women by chewing cornmeal bread and then spitting out the resulting mass.

Under the influence of saliva enzymes, starch turns into sugar, and the drink begins to ferment. The strength of chicha can range from 1% (for everyday use) to 6% (for drinking during religious holidays).

In addition to corn, chicha can also be made from cassava, rice, grapes or apples.
