Where did chicken tikka masala come from?

Britain exports chicken tikka masala to India.

Invented in Glasgow in the late 1960s, chicken tikka masala (or KTM) is Britain's most popular dish. There is no standard recipe. During a recent review, The Real Curry Guide tried forty-eight different options and found only one common ingredient - chicken.

Chicken tikka is a traditional Bangladeshi dish. Pieces of marinated chicken meat are cooked in a clay oven called tandur, a method of cooking that comes from the Middle East, and the word tandur comes from the Babylonian tinuru, "fire."

Tandoori chicken first appeared on British restaurant menus in 1966. It was London's Gaylord Restaurant on Mortimer Street, the same one where the first episode of Not the 1979 O'clock News was filmed in XNUMX. Soon the recipe for "tandoori chicken" reached Glasgow, and when, as legend has it, one of the visitors asked for a dish of gravy, which was dry for his taste, the chef quickly concocted an impromptu tomato soup with spices and cream.

Masala means "mixture of spices," and regular KTM contains ginger, garlic, tomatoes, butter, and cream flavored with cardamom, cloves, cumin, nutmeg, mild paprika powder, paprika, fenugreek, and turmeric.

It is turmeric that gives the dish its characteristic bright yellow color, although it is sometimes replaced with the synthetic dye tartrazine (E102). (Just because of this very tartrazine - not to mention other unpleasant things - it is almost impossible to remove curry stains from clothes.) KTM does not have any standard taste and color: it can be yellow or brown, red or green; peppery-spicy, creamy-tender or sweetish-light.

In 2001, British Foreign Secretary Robin Cook literally stated: “Chicken tikka masala has become a truly national food of the British - and not only because it is the most popular dish in the country. KTM is a perfect illustration of how Britain absorbs external influences and knows how to adapt to them."

One in seven curries sold in the UK today is KTM: 23 million servings per year. Many of the schools and charities in the city of Sylhet in Bangladesh are funded by the profits generated from the British chicken tikka masala boom.

Today, Britain has 8000 Indian restaurants with a total turnover of more than two billion pounds and a staff of 70 employees.
