Why is bread so important?

Bread in one form or another is eaten all over the world. It is considered the basis of life. In many countries, bread makes up 50% or more of the daily diet of most of the population. Where people have low incomes and bread is the cheapest food item, the bulk of the calories come from bread.

In the United States, where the standard of living is much higher than in many other countries, mostly other, more expensive food is eaten. Only 14% of calories come from bread. But even this amount of bread contains essential nutrients, which in percentage terms are: 20% protein, 26% thiamine, 14% riboflavin, 34% iron, 17% calcium. So you see how important bread is.

Since most people eat white bread, and because low-income people eat a lot of it, a good way has been found to provide the population with added nutrients that may not be included in the diet. Therefore, the baking industry in many countries enriches white bread with special additives.

Although bread can be easily bought at the store, if you have a lot of extra time, then try baking it yourself. And then you will have an idea of how difficult it is to bake your own bread all the time.

Scientists at Dresden University of Technology have developed "light ink". In their role - organic luminescent molecules, which in a certain pattern are applied to a transparent plastic film with a thickness of less than 50 microns (thinner than a human hair). They appear under the influence of ultraviolet light and "erased" under infrared light.

The principle of operation of transparent "labels" is as follows. Oxygen is present in the plastic film, which steals light energy from the luminous molecules. UV radiation causes a chemical reaction that effectively removes O2. As a result, the luminescent molecules are activated and emit light. When infrared light hits the film, its temperature rises, and this, in turn, "opens the door" for oxygen: it easily penetrates back.

These labels can be made in any size. In addition, they are inexpensive: less than two euros per square meter of film with luminescent molecules. Labels can be printed with barcodes, serial numbers or addresses that can only be read on demand. Plus, these invisible tags can take document security and anti-counterfeiting to a whole new level.
