What is caffeine?

Now you can buy decaffeinated coffee, and millions of people prefer it to regular coffee. What is caffeine, and why do some people want to get rid of it? Roasted coffee beans contain so many different substances that science still cannot identify them all. But the most well-known substance is caffeine. It is complex in its chemical composition.

In its pure form, caffeine is not found - only in compounds with acids. One coffee bean contains approximately 1% caffeine. Caffeine is stimulating, which is why some people avoid drinking it at night. Other people, on the contrary, believe that coffee does not interfere with their sleep. As already mentioned, at different times of the day, caffeine affects a person in different ways. It has been proven that its effect on different people is not the same.

It is important to note here again that caffeine does not exist in its pure form. It is part of other substances and in combination with food becomes completely different. So, if you add milk or cream to coffee, then caffeine combines with the protein found in milk and cream, and its effect weakens.

You can isolate caffeine from coffee by evaporating or soaking green beans before roasting them.
