to prepare kvass the following ingredients will be needed:

  • 8 liters of water;
  • 60 grams of fresh yeast;
  • 1 a glass of sugar;
  • 1 loaf of rye (Borodino) bread weighing 500-700 grams;
  • a handful of raisins.

Cut the bread into slices, dry in the oven at maximum temperature until brown. The darker the crackers are, the darker the kvass will be in color. You need to try not to overcook the bread, otherwise the kvass will be bitter.

Boil water in a large enameled saucepan, remove from heat, add sugar and put crackers. Leave until cool. The water should become slightly warm. When the water has cooled, scoop some into a bowl and dissolve the yeast there. Pour back into the saucepan, stir to distribute the yeast evenly.

Tie the pan with a cloth or gauze, leave for 36 hours.

Strain kvass through cheesecloth, add more sugar to taste (excess sugar will make kvass too strong). Pour strained sweetened kvass into jars. Throw a pinch of raisins into each jar, which will make the kvass sharper. Cover the jars with saucers, but not with lids, put in the refrigerator for another 12-24 hours.

Pour kvass through a sieve into jars, throw in the same raisins, put in the refrigerator.
