Endive is little known, but deserves to be widely spread as a plant rich in vitamins. It is believed that cultivated endive originated from the wild C. pumilum, which grows in the Mediterranean countries. In culture, it is widely distributed in Germany, France and the Scandinavian countries, where it goes far to the north (70 ° N).

The species C. endivia is divided into two varieties: endive itself and escarole. Both form a compact rosette of green and yellowish green leaves. In endive itself, the leaves are rounded, thick, with serrated edges and a fleshy wide central nerve.

Endive varieties can be arranged in such an order that they will represent a series of transitional forms from narrow-leaved to broad-leaved, that is, from endive proper to escarole.

Rouen, or Deer Horn, can be considered transitional between endive and escarole.

Endive is cultivated like lettuce; during the growing season has several terms of sowing. Usually, it is sown in early spring in a tape way, with distances between tapes of 40-50 cm and between rows of about 29 cm. It is thinned out gradually (as it grows) so that the plants do not interfere with each other.

Endive, like ordinary lettuce, can also be cultivated in protected ground.

The beautifully dissected, curly leaves of endive, which are the goal of its culture, are bitter due to the presence of milky juice (especially in the veins). True, this bitterness gives a peculiar piquancy to greens, especially in combination with a fatty meat dish. To soften it, you need to leave the chopped leaves for some time in the air. They will wilt and become less bitter.

The leaves of the endive itself are very decorating dishes and serve as a side dish.
