Biennial root plant; found wild in southern Europe and Siberia.

Previously bred to treat snake bites. Now cultivated as a root vegetable throughout Europe, America and other countries.

Scorzonera root vegetables are quite nutritious (contain 1,5% nitrogenous substances, 0,34% fat and 20,4% carbohydrates). They are eaten in different ways: they are fried in butter and sprinkled with breadcrumbs like cauliflower, put in soups, sauces, boiled, etc.

The stem of this plant is 60-125 cm tall, ends with yellow reed flowers collected in baskets. Petals are entire, two varieties are distinguished by their shape: var. glastifolia Waller - with lanceolate and oblong-ovate petals - and var. asphodelodes Waller - with narrow petals.

The root is long (up to 30 cm), cylindrical, 2-4 cm in diameter, dark brown (almost black), its flesh is white, tender, contains a lot of milky juice. Seeds are oblong, narrow, cylindrical, 12-17 mm long and 1-1,5 mm wide and thick, pointed, yellowish-white. The weight of 1000 seeds is 13-14 g, they lose their germination capacity quickly.

Scorzonera is an optional self-pollinator.

The following varieties of scorzonera are distinguished: Ordinary - with long cylindrical dark brown roots; Russian giant - with wide leaves and large root crops; Volcano - with black cylindrical roots.

The best soils for scorzonera are loose chernozems or fertile loams.

Its moisture requirement is less than that of white oat root. Sowing is done in early spring in the same way as for white oat root.

The young leaves of S. humilis L. are used as a salad. Young leaves and roots of the Sicilian species - S. deliciosa Gussone also serve as a vegetable. In California, S. maxima Bioletti is eaten.

  • Treatment of skin diseases: Scorzonera can help with eczema, psoriasis, and other skin problems. To prepare the tincture, add 1 tablespoon of crushed scorzonera roots to 1 cup of boiling water and leave for 20 minutes. Apply tincture in the form of compresses to the affected areas of the skin.
