Synonyms: Menyathes nymphoides L Limnanthemum nymphoides (L.) Link. Nymphoides peltatum (Gmel.) O. Ktze.

Aquatic perennial plant; in Japan it is cultivated in ponds for the leaves used as a salad.

The stems are long, reach the surface of the water; rhizome is jointed, long (up to 1,6 m), creeping. The leaves are round-elliptical or rounded, on long petioles, floating on the surface of the water. The leaf blade is 3-5 cm long and wide, densely covered with small dark glandular spots on the underside, entire or finely and bluntly notched.

The flowers are collected in umbellate bunches in the axils of the leaves. Corolla bright yellow, 15-22 cm long, 2/3 dissected.

Seeds are flat, broadly elliptical and bordered, with cilia along the edge, 6 mm long and 3 mm wide.

It occurs wild in Europe, the Caucasus, Siberia, the Far East and Central Asia. Limnanthemum peltatum F.v. Mueller (Northern Australia) is a small aquatic plant with small, round tubers that are edible when roasted.

Consumers want chocolate mousse to retain its texture and flavor from the supermarket to the dinner table. Unfortunately, many favorite products lose foam after a few minutes.

Developing the "ideal" foam on Earth is very difficult, as our planet's gravity literally crushes fragile foam bubbles. Therefore, specialists from the European Space Agency are studying foam in zero gravity, where nothing interferes with the formation and development of bubbles.

ESA has been conducting foam research since the 1980s. More than 10 years ago, a private food company, Nestle, became interested in space agency research. The food industry is very concerned about the quality of the foam, because a stable foam, for example, the same chocolate mousse, creates a pleasant velvety in the mouth, and it gives lightness to coffee.

Creating foam in microgravity is not as easy as it might seem. After several experiments, the scientists came to the conclusion that electromagnetically driven pistons are the best way to inject liquid into a special mold. The first experiments with milk protein for Nestle were carried out during flights along a parabolic trajectory, which provides 20 seconds of weightlessness.

Scientists are now confident that their equipment is working properly and plan to conduct larger experiments aboard the International Space Station. This cannot but please ordinary consumers, because half of the products in our refrigerator are based on foam and emulsion. If ESA specialists manage to create an "ideal" foam, this will allow, without adding "extra" and not always useful ingredients, to extend their shelf life while maintaining taste.
