Origin: From the novel The Golden Calf (1931) by Soviet writers Ilya Ilf (1897-1937) and Evgeny Petrov (1903-1942). Words by Ostap Bender. The writer Viktor Ardov tells about the origin of this expression in the article "Wizards" (Memoirs of Ilya Ilf and Evgeny Petrov: Sat. M., 1963): "... Scientists from the Monell Center (USA) came to such an interesting conclusion. They found that olfactory receptors found in the nasal cavity are also found in taste cells found on the tongue. This discovery could lead to the development of odor-based taste modifiers that could help fight nutrition-related diseases such as obesity and diabetes.

Smell provides detailed information about the taste quality of food, and taste, by which the tongue detects sweet, salty, sour, bitter molecules, acts as a "gatekeeper" for assessing the nutritional value and potential toxicity of food. Until now, these two systems were considered independent systems that did not interact with each other until signals from taste and olfactory receptors arrived in the brain. It turned out that they interact with each other at the very first stage.

Cell biologist Mehmet Hakan Ozdener and colleagues used methods developed at the Monell Center to culture living human taste cells (receptor cells located in the taste bud). Using genetic and biochemical methods to study taste cell cultures, the researchers found that these cells contain many key molecules that are present in olfactory receptors.

Then, turning to calcium imaging, they showed that cultured taste cells respond to odor molecules in a similar way to olfactory receptor cells. Other experiments by scientists at the Monell Center have also confirmed that a single taste cell can contain both taste and smell receptors.
