Beef on rice grains 17.02.2024

Bioengineers have used rice grains as a base for growing beef to enrich the plant product with the nutritional elements of meat. Currently, rice contains slightly more fat and protein, but in the future it is planned to increase the number of cells, which will increase these indicators. The cost of this rice is estimated at about $2,23 per kilogram, compared to regular rice at $2,2, but significantly cheaper than beef at $14,88.

Experiments with growing beef on rice grains represent an innovative approach to creating more nutritious foods. Despite current limitations, research could lead to the development of new methods for producing meat-enriched foods, which would have a positive impact on human nutrition.

Rice is one of the most popular foods in the world due to its low allergenicity and relative availability. However, it does not contain all the necessary nutrients for humans, so scientists are striving to make it more complete. Experts use genetic modification of plants to increase levels of beta-carotene, a precursor to vitamin A.

Scientists at Yonsei University in South Korea decided to supplement rice with meat, avoiding the use of animals, to reduce costs and environmental impact. They tried to grow meat on grains.

Scientists initially assumed that cow muscle and fat cells would attach easily to porous rice grains. However, the first experiments were unsuccessful. To increase cell attachment and growth, the scientists pretreated raw rice grains with fish gelatin and added microbial transglutaminase, a common food additive. After the cells had grown on the rice for a week, it was washed and steamed like regular rice.

The resulting products - pink rice grains - turned out to be more durable than ordinary ones. Their nutritional value has also changed, although only slightly. For example, 100g of beef rice contains 0,1g more fat and 0,31g more protein than regular rice, representing a 7 and 9 percent difference, respectively. This is similar to eating 100 grams of rice and one gram of beef. However, scientists realize that the reason is that there are not enough cells, so they only formed a thin layer on the rice grains. In subsequent experiments, the authors will work to increase the number of cow cells on rice.
