Ethyl and amyl esters of acetic, butyric, valeric, benzoic, formic and other acids are peculiar smelling substances, which, alone or in combination with others, have the smell of fruits. Moreover, this characteristic aroma is most clearly manifested with strong dilution.

Below are the reviews artificial fruit essences.

apple ether

  • Rectified wine spirit 1 kg;
  • Amyl ester of valeric acid 100 g;
  • Acetic ethyl ether 10 g;
  • Nitrous ethyl ether 10 g;
  • Alcoholic solution of oxalic acid 10 g.

All parts are mixed and distilled in a glass retort. The middle distillate is poured onto thinly sliced, fresh apple skins, and after 48 hours of infusion, it is distilled a second time without discarding the skins.

Vanilla extract

  • Rectified alcohol 1 kg;

  • Acetic ethyl ether 50 g.

Blended, distilled and rectified over fresh pear skins.

strawberry ether

  • Rectified wine spirit 1 kg;

  • Formic ethyl ether 10 g;
  • Nitrous ethyl ether 10 g;
  • Gaultier oil 10 g.

Mix, distill and rectify with fresh strawberries.

raspberry ether

  • Rectified wine spirit 1 kg;
  • Acetic ethyl ether 50 g;
  • Amyl ester of butyric acid 10 g;
  • Benzoinethyl ether 10 g;
  • Formic ethyl alcohol 10 g;
  • Enanth ether 10 g;
  • Nitrous ethyl ether 10 g;
  • Gaultier oil 10 g;
  • Acetic aldehyde 10 g;
  • Alcoholic solution of tartaric acid 10 g;
  • Alcoholic solution of succinic acid 10 g.

Blend, distill and rectify over fresh raspberries.

cherry ether

  • Rectified wine spirit 1 kg;
  • Essential bitter almond oil 10 g;
  • Acetic ethyl ether 50 g;
  • Benzoinethyl ether 50 g;
  • Alcoholic solution of benzoic acid 10 g.

Mix and rectify.

cherry ether

  • Rectified wine spirit 1 kg;
  • Acetic ether 200 g;
  • Benzoinethyl ether 100 g;
  • Essential bitter almond oil 10 g;
  • Cinnamon oil 5 g;
  • Clove oil 5 g.

Mix and rectify.

pineapple ether

  • Rectified wine spirit 1 kg;
  • Oily amyl ether 10 g;
  • Butyethyl ether 50 g;
  • Acetic aldehyde 10 g;
  • Chloroform 10 g.

lemon ester

  • Rectified wine alcohol 1 g;
  • Lemon oil 100 g;
  • Acetic ethyl ether 100 g;
  • Nitrous ethyl ether 10 g;
  • Chloroform 10 g;
  • Alcoholic solution of tartaric acid 100 g;
  • Alcoholic solution of succinic acid 10 g.

Mix and rectify over fresh lemon peels.

Artificial fruit esters are often made up in a simpler way, namely by mixing, without applying rectification, various esters and substances in the proportions indicated in the listed recipes. Glycerin is usually added to the mixture, namely: 40 g each for apple and raspberry esters, 20 g for strawberry, 30 g for cherry, 50 g for lemon and 100 g for pear.

So, for example, pineapple essence for the preparation of lemonade consists of 10 wt. including butyethyl ether, 100 wt. including alcohol 96 °, 20 wt. hours of rose water and 1 wt. hours of coloring matter. For 1 liter of lemonade, 15 to 20 drops of this essence are enough. Essence only lasts for a few days. To make quince essence, mix 1 wt. including ethyl ester of normal nonylic acid with 1 wt. hours of wine alcohol.
